BLACK BEAN BROWNIES

Makes one large baking sheet worth of brownies (can be halved if using a smaller toaster oven)

 

  • 2 cans of black beans (preservative free) rinsed
  • 2 eggs (can use flaxseed egg substitute if making vegan)
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup + 2 tbsp of coconut sugar
  • 3 tbsp coconut oil
  • 2-3 tbsp almond milk (milk alternative)
  • 2 tsp balsamic vinegar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp freshly ground coffee or instant coffee
  • 1-2 cups semisweet chocolate chips (some for inside and some for on top)

 

Combine all ingredients in a food processor (minus the chocolate chips) and blend until it looks like a beautiful dark think but pourable batter (add more almond milk if it looks too thick). Make sure you taste it (add more cocoa powder or sugar if you like it sweeter). Then stir in half of the chocolate chips (the amount is really up to you). Pour in a large baking sheet that has parchment paper or has been coated in coconut oil. Add the rest of the chocolate chips on top (optional) and bake at 350F for about 20 min or until done. Let it cool first and then cut into squares. Enjoy!

Egg substitution: combine 2 tbsp of flaxseed meal with 5 tbsp of water, let sit until gelatinous
