The Best Pumpkin Pie You'll Ever Eat (Gluten and Dairy Free)

I don't want to brag but I have recently made the best pumpkin pie, ever :) Once you eat a home-made pie you'll never be able to eat a store bought version again.

Crust (adapted from the Oh She Glows Cookbook)

2/3 cup Medjool Dates

1 1/4 cup rolled oats

1/2 cup walnuts

1 tsp ground cinnamon

1/4 tsp salt

4 tbsp coconut oil

Combine oats, walnuts, spices in a food processor and blend. Then add the dates and oil and blend again until it comes together. Press (with your fingers) this mixture in a pre-greased (with coconut oil) pie dish so that it covers the sides too. Poke holes with a fork.

Put in the oven at 350F for about 8 min.

Filling

2 cups of pure pumpkin puree (we roasted a pumpkin and used the insides but you can use a can)

2 eggs

Cream from 1 can of coconut (keep the can in the fridge and only use the solid parts)

Spice mix: 1 tsp of dried ginger, 1 heaping tsp of ground cinnamon, 1 tsp ground cloves, 1/2 tsp nutmeg, 1/4 tsp salt

1/2 cup of maple syrup

1 tbsp coconut oil

Put all of the filling ingredients in a blender or food processor and blend until smooth. Add the the cooled pie shell. Sprinkle some coconut sugar on top and then bake in the oven at 350F for about 40 minutes.

Eat warm with whipped coconut cream on top and enjoy. :)
